Egg Masala


Ingredients
  1. Eggs – 3 – 4 nos
  2. Cinnamon – 2 inch, Cloves – 3, Bay leaves - 1
  3. Onions (cut into thin slices) - 3 
  4. Tomato (cut into thin slices)-2
  5. Slit Green chilli – 1
  6. Ginger Garlic Paste – 2 tsp
  7. Curry leaves 
  8. Garam masala powder – 1/2 to 1 tsp
  9. Chilli powder – ½ tsp
  10. Kashmiri chilli powder – ½ tsp
  11. Pepper powder – ½ tsp
  12. Turmeric powder – ½ tsp
  13. Coriander powder – 2tsp
  14. Salt to taste
  15. Oil
  16. Coriander leaves for garnishing 
Method:
  • Remove the shell of boiled eggs & keep aside
  • Mix all powders with a little water and keep aside.
  • Heat oil in a pan. Add cinnamon, cloves and bay leaves.
  • Add ginger, garlic paste, slit green chilli and curry leaves.
  • Add onions and salt and saute, till golden brown.
  • Add powder mixture and fry for a minute and add tomato. Fry till oil separates.
  • Now add 1/2 cup of water and add boiled eggs and close with a tight lid.
  • Allow to simmer for 5 minutes.Garnish with coriander leaves and serve hot with Paratha, Chapathi , Appam or Rice. Enjoy;)
